Fresh ginger has not been dried or processed in any way. Its skin is usually brown and fibrous in texture. Fresh ginger has a strong flavor and aroma, making it an essential ingredient in many dishes, especially Asian cuisines. It is also commonly used to make ginger tea or added to smoothies for its health benefits.

Dry ginger

Dry ginger or ground ginger, on the other hand, is made by drying and grinding fresh ginger into a fine powder. It has a normal yellow color and more flavor compared to fresh ginger. Ginger is used as a spice in cooking and baking as well as in traditional medicine.

Both have nutritional gaps

Both fresh and dried ginger offer different benefits, but their nutritional profiles differ slightly due to different processing methods. Fresh ginger contains about 79% water, while dried ginger contains only 10 percent water. This means that ginger is more concentrated in terms of nutrients and calories, as it has less water content.

Fresh ginger is an excellent source of vitamin C, potassium, magnesium and manganese. It also contains antioxidants like gingerol and shogol, which have anti-inflammatory properties. Ginger, on the other hand, is an excellent source of iron and dietary fiber. It has higher levels of gingerol and shogol than fresh ginger.
